Buttermilk Cinnamon Rolls

We love cinnamon rolls in our house but with our hectic lives they usually come out of a tube. That is why I decided to conquer making these. I founds this fabulous recipe and let me just say, they were a HUGE hit!


2 packages active dry yeast    
1 1/2 cup buttermilk
4 1/2 cup flour
1/2 tsp baking soda
1 1/4 cup brown sugar
1/4 cup warm water (about 110 degrees)
1/2 cup vegetable oil
1 tsp salt
1/2 cup melted butter
1 1/2 tsp cinnamon


In large bowl dissolve yeast in warm water. Let stand until creamy (about 10 mins).
In small saucepan heat milk until warm to the touch. Pour the buttermilk and oil into the yeast mixture and mix well.
Combine flour, salt, and baking soda into a small bowl. Stir the flour mixture into the liquid 1 cup at a time until a soft dough forms.
Turn dough out onto a flour surface and kneed 20 times. Cover and let rest 15 mins. In a small bowl stir together butter, brown sugar, and cinnamon.
On a floured surface roll dough out into a large rectangle. Spread butter over dough and roll into a log and pinch the seam to seal.

Slice into 1 inch pieces and place in a well greased pan. Cover and refrigerate for 30 minutes.
Bake at 400 degrees for 20-25 minutes.

Cream Cheese Cinnamon Roll Icing


2 oz cream cheese, softened
7 tbsp butter, softened
1/2 tsp vanilla
2 tbsp milk
1 1/2 cup confectioners sugar
1/4 tsp salt

Beat together the cream cheese and butter in a large bowl until creamy. Mix in vanilla and milk. Gradually mix in sugar and salt until smooth and fluffy. Frost cinnamon rolls and ENJOY!
